Easy Cheese Stuffed Peppers!

peppersMade the most delish dinner tonight so I thought I would share this idea.

I took little sweet peppers, cut the tops off stuffed them with mozzarella cheese and baked them on 400 degrees for 20-30 minutes. (I don’t really time things) Super good….but I bet they would be better on the grill….I will be throwing some on next time we cook outside! <3

Southwestern Chili

I made this a few months ago and thought I would share! My cousin made it and she told me she just threw different beans and “crap” (lol) in her chilli and came up with this. I told her it would be an awesome crock-pot dinner…so I attempted and came up with this!

1-2 pounds of ground lean turkey. (I buy the leanest I can find…)

1 can of black beans

1 can of garbanzo beans (chic peas)

1 can black-eyed peas

1 can black beans

1/2 bag frozen green pepper chopped

1/2 bag  frozen onion chopped

1 bag frozen corn (I found a western corn mix)

1 big can  canned tomatoes

1 big can of tomato puree

spices of your choice (i like spicy so I used red pepper flakes and some chili powder)

Kale Chips instead of Potato Chips!

Have you ever craved something super crunchy and a little salty? I know I am not the only one that does this from time to time. I also know that if I go near a bag of potato chips I will not be happy until the whole bag is gone. I was watching “Kim and Kourtney take New York” (yes guilty pleasure) and Kourtney was talking about kale chips, and she had everyone tried them and everyone said “ew.” Well, I have always loved greens so I looked into these a little more, and that is when I decided to try them. Here is my recipe for the perfect kale chip!

Preheat oven to 300F (you want them to cook slow)

Wash wash and wash your Kale….(right now it is super cheap, like $.99 a lb)

Dry the kale completely, this takes time and lots of paper towels…or you can let air dry, I just have no patience.

On 11.1.10 I had Gastric Bypass Surgery. A lot of people told me I was “taking the easy way out” but that was the farthest from the truth. The truth is, I prepped for 6 months, a lot of tests and things I had to go through before I was even able to submit to insurance to see if I could go through with the surgery.
