When I saw this picture and recipe on Pinterest (CAME FROM THIS BLOG) I have to admit, I was intimidated because I never “stuffed chicken” before. I know all you do is slice the middle and add some junk in there and bake, honestly easy right? I think it just sounds hard and I was always scared of it. Well, when I saw this recipe and saw the middle would have to do with cream cheese, I had to make it. Who doesn’t like cream cheese (besides my hubby but I don’t care) haha. Remember, I take no credit for this recipe, I am just a stay at home mom that follows recipes…coming up with them….hahaha….ya right….maybe one day! Please….all credit for this yumminess goes HERE!
Is it hard to make? Honestly NO! It does take time, I probably made it a little harder and time consuming than it should/could of been. but I wanted to make sure I did a really good job and I wanted to make sure that the filling stuck inside the chicken and was neat. The hardest part was after filling the chicken. I used one toothpick per breast, that way I knew there was one in each and I knew to get them out before I served them.
Is it expensive? Honestly, no…it tastes expensive but its cheapo. I but those 10 pound bags of chicken breasts from Sams, so I always
have chicken in there. After that you just need cream cheese, shredded cheddar cheese, and jalapenos. I did the lazy way out…I bought the canned jalapeno’s because I hate cutting things. I also added green chillies because I had them sitting there and I thought it would be good (which it was) Oh ya, use the Panko crumbs that it calls for, it is worth the extra step…it makes the chicken. Don’t get lazy on that part…promise it is worth it!
Did it go over well? It went over so well, Xavier ate a whole chicken breast himself….YUM! I even ran a chicken breast up to my mom and dad because they wanted to try it….and they LOVED IT!
Would you make it again? YES YES YES….and now that I am not scared of stuffing chicken I am going to start experimenting with different fillings….Im thinking cheese and bacon might be next! MMMMMM…..
Let me note this, I did NOT use the taco season that the recipe called for in the Panko…I didn’t have any so I seasoned with red pepper, Italian seasoning, and pepper. Im sure the taco seasoning is good…I would of tried it if I had it….just didn’t have it!
