Yesterday I got creative and made another Pinterest find. I saw a link to a Sausage Penne Pasta bake a few weeks ago and I bought the stuff and saved it until I knew I would have a busy day. It seemed easy enough to be able to throw together fast and still not have a late dinner. I was right, and I am going to remember this recipe for days like that. It tastes and looks like you spent hours making it, but really it took like 15 minutes to prep and 45 minutes to bake…give or take. Super simple, but super yummy.

I usually am good with going strict with the recipe give or take a few things, but this one I changed up more then usual, just because I had some extra things I wanted to put in and some things I wanted to leave out. So…..let me tell you what I did…but remember, I do not take credit, I would of never came up with my version if it wasn’t for THIS VERSION.

What I used…

1lb of Penne Pasta

1lb of Sausage (I used the sausage in a tube)

1 can of garlic flavored canned tomatoes

1 jar of pasta sauce

sprinkle of Italian Seasoning

Ricotta Cheese (I use A LOT)

Shredded Cheese

Boil Pasta, as that is softening brown the sausage…once the Sausage is brown I added 1 can of garlic flavored canned tomatoes. Added the pasta to a 13 by 9 baking dish then added the sausage and tomatoes to the top and mixed together. I then added 1 jar (give or take) of pasta sauce. I then sprinkled it with Italian Seasoning to taste. On the top I scooped lots of Ricotta on the top and mixed it around with the sauce and then added shredded cheese. I baked this on a cookie sheet because I was scared it was going to spill over, but it didn’t.

Bake on 375 for 40 minutes or until hot all the way through!

That is it…soo simple! I would even suggest making this easy dish for a party that you are going to, I promise everyone that loves pasta will love this dish. My hubby and son both asked for seconds, and there was enough to lunch/dinner left overs the next day! (I am eating some as I type)

If you make it, remember to leave me a comment and let me know what you think! ENJOY!
